The cold weather is slowly creeping in. According to game of thrones, Winter is coming, I think it is almost here!!!. For Lunch I wanted to have something warm with a little bit of sauce in it. I thought of my grandmother and remembered her delicious Unripe plantain porridge chuck full of tasty goodness. Full of little pieces of chopped meat, fish and other scrumptious bits of goodness.
Today I revamped her famous dish and made it in my own style. Unripe plantain is a healthy source of carbohydrate and sodium which regulates body fluid, relives muscle cramps and many more.
This is quick and easy to make and is perfect for Lunch or an early dinner
INGREDIENTS
3- 4 pieces of Unripe Plantain
Chopped Onions and Pureed Onions
Chopped Steamed Carrots
Steamed Gizzard
1/2 cup of the gizzard stock
Spring Onions ( to Garnish)
3-5 tsp of Palm Oil
INSTRUCTIONS
1.Place your stock and Onions (Chopped / Pureed) in the pot and allow to cook for 2-4 minutes
2.Add your Plantain.Cook until slightly tender (It can take 15-20 mins depending on the quantity of plantain)
3.Add your Protein (I used Gizzard which was slightly tender)
4.Add your seasoning (I used 2 pieces of Knor Cubes and Sea Salt- my stock was already tasty )
5.Add your palm Oil
6.Cook for another 5- 10 mins (You can add water more or stock if it is becoming too dry)
7.Add your steamed carrot , vegetables or whatever you choose.
8.Add Chopped Spring Onions, Cook for 2-3 minutes
9. Garnish and Serve!!
