Beans has been one of the foods I have been craving lately, over time I have created different recipes around it. The rice and beans were boiled as normal. The sauce is quick and easy to make, this is perfect for lunch for Dinner. See the instructions below.
Ingredients
For the sauce you will need the following.
5- 7 tsps of Coconut oil
Chopped onions,
Chopped peppers (anyone you prefer- green,yellow or red)
Minced garlic
Minced ginger
Liquid Stock ( you can use the stock from your meat or the protein that you used)
Seasoning -(Curry- This what gives the sauce its vibrant colour Salt, Pepper)
Cooked Protein (I used Lamb, you can use protein you use choose
2-3 tsp of Flour to thicken (you will this mix with water)
Instruction
1.Place your oil in the pot
2.Add your onions and allow to simmer until slightly tender
3.Add your minced garlic, ginger and curry and allow to simmer for 2-3 minutes
4.Add in your stock and protein (meat)
5.Add your seasoning (salt, pepper) and allow to cook for another 3-5 minutes
6.When the base is done and you comfortable with the taste add the flour mixture to thicken.( Please gauge the quantity of the your stock before you add the flour mixture – You may need more or less flour)
7.Allow to thicken for about 2-3 minutes
8.Add in your mixed coloured vegetables. Allow to cook for 1- 2 minutes if you like it crunchy or cook for longer if you prefer it softer
9.Taste for Salt
10.Garnish with Spring Onions
Serve with boiled rice and beans or whatever you like. I added chopped tomatoes and steamed kale to mine.
